Banana Bread French Toast

Sure French Toast doesn’t NEED a new twist, but why not impress someone (or yourself!). You and your breakfast companions deserve it because I'm not bragging (OK I am) when I say this recipe is DELICIOUS. You can use any type of bread, but we find banana bread to be particularly tasty. (Note: Sweet Potato Bread French Toast is ALSO delicious.) And we had some over ripe bananas on hand, company in town, and this was the perfect way to get fancy in the morning.

materials
  • banana bread
  • 1/2 Tablespoon milk
  • 1 egg
  • butter
  • cinnamon
  • syrup

As far as banana bread recipes go, use your personal favorite or use Google and find a highly rated gem. You know how to live your best life with the help of your pal Google. We made the banana bread the afternoon before making the toast, so that it wouldn’t be as fresh. It could have even been a couple days more old honestly.

This recipe works well for four thick slices of French Toast. If you’re making more, multiply the portions of eggs/milk accordingly. We also recommend slicing the banana bread thickly - about 3/4 inch.

From there, you make French toast the same way you always do. For first-timers/those needing a refresher:
1. Heat butter in a pan over medium heat.
2. Mix egg and milk (and mix it well, same method as making scrambled e
ggs) in a dish deep enough for you to dip the bread in. (In this case, I used
the lid of the aluminum bread pan I had baked the banana bread in - available at grocery stores everywhere.)
3. Dip bread in egg-milk mixture, and flip it over so both sides are
coated. (But allow excess to drip off.)
4. Place in pan, and sprinkle the top with cinnamon (you’ll flip after a couple of minutes and do this to the opposite side as well).
5. The French toast will take on a golden, light brown hue (thanks to
the eggs) when finished. You want more toast than soggy.
6. Plate it up, pour on the syrup, and enjoy!
