A creative twist on the most important meal of the day with delicious vegan banana waffles! You can top them with maple syrup, coconut whipped cream, or even a layer of fresh fruit. Any way you eat them, these light and fluffy waffles are sure to be heavenly!
- 2 bananas, chopped
- 3 tbsp coconut oil, melted
- 2 tbsp maple syrup
- 1 1/2 cups almond milk
- 2 tsp vanilla extract
- 1 tsp cinnamon
- 1 tbsp all-purpose flour
- a pinch of salt
STEP 1: Chop your bananas into coin-sized pieces, and add to your blender.
STEP 2: Add your coconut oil, maple syrup, almond milk, vanilla extract, and cinnamon. Blend until smooth.
STEP 3: In a mixing bowl, combine your dry ingredients: flour, baking powder, and salt. Add your wet mixture and whisk until smooth.
STEP 4: Preheat your waffle iron. Once hot – add your batter to the waffle maker. Use a spatula to spread the batter to the corners.
STEP 5: Cook your waffles according to your waffle makers’ instructions.
STEP 6: Top your waffles off with some coconut whipped cream, coconut ice cream, maple syrup, peanut butter, or fruit! Whatever floats your boat. Eat right away, or freeze some for later!
