Gorgeous Gluten-Free + Vegan Mermaid Waffles

If your morning "I woke up like this look" are a little more inspired by Ariel and prefer to stay on the vegan or gluten-free side, it doesn't mean that you can't have waffles either. Embrace your inner mermaid and start your morning right with this delicious and gorgeous gluten-free and vegan recipe for Mermaid Waffles that mixes healthy spirulina with tasty vegan cream cheese. Complete with edible "bubbles" and edible gold leaf, you're set for a fabulously nutritious part of this complete delicious nutritious breakfast!

Dress up your toaster waffles with some seriously gorgeous toppings that will have your fins flippin’ in no time! It’s hard not to have a happy start to the day when your breakfast looks this good, even when it’s topped with edible gold foil. It’s almost too pretty to eat! ALMOST.

Why “mermaid” waffles? Cuz we’re gonna eat algae! Bear with us one sec; the algae we’re talking about is called “spirulina” and you can get it at any health food store. Many people take spirulina (or its relative chlorella) as a vitamin/mineral supplement. You’ll often see it in smoothies, too! Look for spirulina in caplets or powder in the vitamin section of your local health food store.

And one more thing: we decided to make our waffles gluten free and vegan, but you can substitute for wheat and dairy if you prefer!

1. First thing’s first: pop those gluten-free waffles in the toaster! We were so pleasantly surprised by how many options there are now for those with food allergies or sensitivities. Check the freezer section of your local health food store and they’re sure to have something that works for you! Keep in mind, this recipe can also be made with gluten-free bread, regular bagels, or any breakfast bread you prefer!

2. Mix in one capsule of spirulina per 8 oz of vegan cream cheese (or non-vegan, you do you). The more you stir, the more the cream cheese will get that even blue-green color. Leave a little bit of spirulina for the end to top off the waffle and complete the “mermaid” look!

3. Spread the cream cheese mixture on your toasty waffle. Resist the urge to just eat it right away. We know, it’s tough. You can do it.

4. Time to decorate! To make these “scales”, draw your design on the paperback side of a sheet of edible gold leaf. Cut out the pattern using clean scissors, then apply the “scales” to the top of the waffles. Stunning, right??

You can also use small flakes of edible gold leaf for a more subtle shine.

Another way to decorate your mermaid waffles? Get some pearlescent sprinkles in the cake decorating aisle and top the cream cheese with them for a “bubbly” look!
